Spicy Turmeric Corn Chowder with Chard, Kale & Spinach

On rainy days, sitting down in front of the fire with a bowl of thick, warm, comforting soup is such a treat.  This chowder, however, really is a meal in itself, and comes together pretty quickly.  If you want to add even more flavor, you can use fresh corn and use the cobbs to make a milky, flavorful stock.  Should you choose to use frozen or canned corn,  this soup is ready in under 20 minutes – perfect for a mid-week supper.  What makes this soup a real stand-out, however, is the use of fresh, grated turmeric. …

SPICY TUNA & OLIVE QUESADILLA

IMG_6191This is such a yummy and quick quesadilla to make!  The crunchiness of the tortillas gives way to a sumptuous, creamy, soft and spicy filling.  Feels like it’s laden with calories, but actually is pretty lean on the calorie front.  I usually just slice it up and eat it like a pizza for lunch – and sometimes serve it alongside a salad to make a more substantial evening meal.  I’m not usually one for tinned tuna – but this recipe really tastes excellent!  The ingredients are pretty much store cupboard ingredients for me, which is exactly how this quesadilla came about!  So  –  when I’m feeling like I want something that is  quick to prepare, yet tastes indulgent, I make this tasty dish….

SPICY RAINBOW SLAW

I just love colorful food, don’t you?  I was planning on making fish tacos, and wanted to make a spicy slaw to go with them.  I went to the local Asian supermarket, planning on buying some Chinese Leaf (Napa Cabbage).  When I got there, I just couldn’t find any.  Bummer.  So, I went to Safeway, thinking I’d have to just use regular white cabbage – when I spotted something I had never come across before – Red Napa Cabbage.  At Safeway.  If you know me well, you know that I don’t particularly like Safeway.  Well, at least the ones near me at any rate.  Their vegetables are over-priced and not great quality.  Supermarkets in the US spray their produce with water every 20 minutes or so.  It means they look good at the time – but by the time you get them home and use them, not so much.  I really wish they wouldn’t do that.  Well – this time, they won me over with this gorgeous-looking cabbage!…
